Add New Item on the fly

Is there a way to add all fields instead of just one when adding a new item 'on the fly'?
Also, I have 3 fields I want to use this for. I notice that if you limit the list [such as in my case where I want the client to see a list of all dogs 'where the gender is like 'dog'] that you do not have the option of adding items 'on the fly'.
