I'm new to the mobile version.

Where are the links (or icons) to VIEW / EDIT a record that are availlable in desktop layouts? I'm missing them in mobile layouts.

What are site visitors expected to do to have acces to the nentionnend functions?

If you click anywhere on the record the icon's will show up either edit / view in text or if you go to pages in project list page settings you can change to icons. What I did is in the menu bar . I put a message for mobile view in visual editor next to the button's . ( Click anywhere on record to edit or view ) . This way the user know's how to edit/view record. I also copied the code in html view for the down arrows button that shows add new / delete selected on to the menu bar itself so it was easy to find.
