I am sure I am probably overlooking something once again but in the search panel is there a way to use a dropdown that is populated by existing values of a field page instead of having to enter a value into a box?

Yes, simply set 'Edit as' settings of this field as 'Lookup wizard', point to database table, select fields etc.
